Smoking Your Dom's Craft Snags
At Dom's Craft Snags, we put a huge amount of care into every sausage we make. From selecting quality ingredients to smoking and seasoning, every step is designed to create a sausage that's juicy, flavourful and made to be shared.
To get the best possible result, we recommend cooking your snags in a smoker. The dry environment helps create that beautiful snap in the casing while gently rendering the fat and building even more smoky flavour.
That said, we know not everyone has a smoker, so we've included a few alternative cooking methods below.
A Few Important Rules
Before you start, there are two things you should never do:
- Never prick a sausage. All those juices and flavour are meant to stay inside.
- Never cook sausages over high heat. Excessive heat can cause the fat to separate from the meat, leaving you with a dry, crumbly sausage.
Low and slow is always the way to go.
Smoker Method (Recommended)
The Two-Smoke Method
This is the method we use and the one that delivers the best flavour and texture.
First Smoke
- Set your smoker to 150-175°F (65-80°C).
- Smoke for approximately 2 hours, using plenty of smoke during the first hour.
- Increase the temperature to 200-225°F (93-105°C).
- Continue cooking until the internal temperature reaches 155°F (68°C).
- Immediately place the sausages into an ice-water bath for 10 minutes.
- Remove, dry thoroughly, and allow to sit at room temperature for 1 hour before refrigerating.
Second Smoke
- Heat your smoker to 200-225°F (93-105°C).
- Smoke for approximately 1-2 hours until the internal temperature again reaches 155°F (68°C).
This second smoke deepens the flavour and creates the texture we love.
Short on time? Skip the second smoke and simply continue the first cook until the internal temperature reaches 160°F (71°C).
Gas BBQ
- Set your BBQ to a low-to-moderate temperature.
- Use indirect heat by placing the sausages opposite the burner.
- Cook until the internal temperature reaches 160°F (71°C).
Oven
- Preheat your oven to 130°C.
- Place sausages on a wire rack over a tray.
- Cook for 25-35 minutes or until the internal temperature reaches 160°F (71°C).
Air Fryer
- Set your air fryer to 130°C.
- Cook for approximately 25 minutes.
- Turn the sausages after 15 minutes.
- Continue cooking until the internal temperature reaches 160°F (71°C).
Food Safety
Always ensure your sausages are fully cooked before consuming.
For best results, use a meat thermometer rather than relying on cooking times alone.
